Ingredients

  • 1 lb lean ground beef
  • 8 corn or flour tortillas
  • 2 cups red sauce (homemade or store-bought)
  • 1 medium onion, chopped
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Sauté chopped onions in a large skillet over medium heat until translucent, about 5 minutes. Add ground beef, breaking it apart, and cook until browned.
  2. Season the beef mixture with cumin, chili powder, salt, and pepper; stir well.
  3. Warm tortillas slightly to make them pliable. Spoon the beef mixture into each tortilla and roll tightly.
  4. Place rolled enchiladas seam-side down in a baking dish. Pour red sauce over the top and sprinkle with cheese.
  5. Preheat oven to 350°F (175°C) and bake for 20 minutes until bubbly and golden brown.
