- 8 corn or flour tortillas
- 2 cups red sauce (homemade or store-bought)
- 1 medium onion, chopped
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Sauté chopped onions in a large skillet over medium heat until translucent, about 5 minutes. Add ground beef, breaking it apart, and cook until browned.
- Season the beef mixture with cumin, chili powder, salt, and pepper; stir well.
- Warm tortillas slightly to make them pliable. Spoon the beef mixture into each tortilla and roll tightly.
- Place rolled enchiladas seam-side down in a baking dish. Pour red sauce over the top and sprinkle with cheese.
- Preheat oven to 350°F (175°C) and bake for 20 minutes until bubbly and golden brown.
