Description

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 cup poppy seeds
  • Zest and juice of 2 lemons
  • 2 large eggs
  • 1 cup milk
  • 1/2 cup vegetable oil

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, poppy seeds, and lemon zest.
  3. In another bowl, beat eggs, milk, vegetable oil, and lemon juice until combined.
  4. Gently fold the wet ingredients into the dry ingredients until just mixed.
  5. Spoon the batter into the muffin tins until each is about 2/3 full.
  6. Bake for 18-20 minutes or until golden brown and a toothpick comes out clean.
  7. Cool for five minutes in the pan before transferring to wire racks.
