Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, poppy seeds, and lemon zest.

- Gently fold the wet ingredients into the dry ingredients until just mixed.
- Spoon the batter into the muffin tins until each is about 2/3 full.
- Bake for 18-20 minutes or until golden brown and a toothpick comes out clean.
- Cool for five minutes in the pan before transferring to wire racks.
