- 1/2 cup vegan mayo
- 1 tablespoon sriracha or hot sauce
- 1 tablespoon lime juice

- 8 small corn or flour tortillas
- 1 cup shredded red cabbage
- 1 avocado, sliced
- Fresh cilantro for garnish
- Lime wedges
Instructions
- Roast the Cauliflower: Preheat oven to 425°F (220°C). In a large bowl, toss cauliflower florets with olive oil, smoked paprika, cumin, garlic powder, chili powder, salt, and pepper. Spread evenly on a baking sheet and roast for 25-30 minutes, stirring halfway through, until tender and golden brown.
- Prepare the Spicy Sauce: In a small bowl, whisk together vegan mayo, sriracha, lime juice, garlic, and salt. Adjust seasoning to taste.
- Warm the Tortillas: Heat tortillas in a dry skillet over medium heat or wrap in foil and warm in the oven for 5 minutes.
- Assemble the Tacos: Fill each tortilla with roasted cauliflower, shredded cabbage, and avocado slices. Drizzle with spicy sauce and garnish with fresh cilantro.
