For the Cauliflower:

  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste

For the Spicy Sauce:

  • 1/2 cup vegan mayo
  • 1 tablespoon sriracha or hot sauce
  • 1 tablespoon lime juice
  • 1 clove garlic, minced
  • Salt to taste

For Serving:

  • 8 small corn or flour tortillas
  • 1 cup shredded red cabbage
  • 1 avocado, sliced
  • Fresh cilantro for garnish
  • Lime wedges

Instructions

  • Roast the Cauliflower: Preheat oven to 425°F (220°C). In a large bowl, toss cauliflower florets with olive oil, smoked paprika, cumin, garlic powder, chili powder, salt, and pepper. Spread evenly on a baking sheet and roast for 25-30 minutes, stirring halfway through, until tender and golden brown.
  • Prepare the Spicy Sauce: In a small bowl, whisk together vegan mayo, sriracha, lime juice, garlic, and salt. Adjust seasoning to taste.
  • Warm the Tortillas: Heat tortillas in a dry skillet over medium heat or wrap in foil and warm in the oven for 5 minutes.
  • Assemble the Tacos: Fill each tortilla with roasted cauliflower, shredded cabbage, and avocado slices. Drizzle with spicy sauce and garnish with fresh cilantro.
  • Serve: Serve immediately with lime wedges on the side.
