Description

Ingredients

  • All-Purpose Flour
  • Granulated Sugar
  • Unsweetened Cocoa Powder
  • Baking Powder
  • Salt
  • Eggs
  • Milk
  • Espresso or Strong Coffee
  • Mascarpone Cheese
  • Heavy Cream
  • Coffee Liqueur (optional)
  • Cocoa Powder for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, and salt until combined.
  3. In another bowl, mix eggs, milk, and cooled espresso until smooth. Gradually combine with dry ingredients.
  4. Fill each cupcake liner two-thirds full with batter. Bake for 18–20 minutes until a toothpick comes out clean.
  5. Allow cupcakes to cool before preparing the frosting by whipping heavy cream and mascarpone together until smooth.
  6. Generously frost cooled cupcakes and dust lightly with cocoa powder before serving.
