- 1 cup brown or green lentils
- 2 large onions, thinly sliced
- 2 tablespoons extra virgin olive oil
- 1 teaspoon cumin seeds
- Salt and pepper to taste
- 4 cups water or vegetable broth
Instructions
- Rinse lentils under cold water until clear. Thinly slice the onions.
- In a large pan, heat olive oil over medium heat. Sauté onions until golden brown (15-20 minutes).
- Stir in lentils and cumin seeds; cook for 2 minutes.
- Add rinsed rice and water or broth, season with salt and pepper, and bring to a boil.
- Reduce heat to simmer, cover, and cook for 20-25 minutes until tender.
- Remove from heat and let sit covered for 10 minutes. Fluff with a fork before serving.
