- 1 lb (450g) halal chicken breast, cut into bite-sized pieces
- 1 can (13.5 oz) coconut milk
- 1 cup chicken broth
- 2 tablespoons fish sauce (or soy sauce for a halal option)
- 1 tablespoon palm sugar or brown sugar
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 1 cup Thai eggplants, quartered (optional)
- 1/2 cup fresh basil leaves
- 1–2 kaffir lime leaves (optional)
- 1 tablespoon fresh lime juice
For Serving:
- Steamed jasmine rice
- Fresh cilantro for garnish
Instructions
- Prepare the Curry Base: Heat vegetable oil in a large saucepan over medium heat. Add the green curry paste and sauté for 1-2 minutes until fragrant.
- Cook the Chicken: Add the halal chicken pieces to the pan and cook for 3-4 minutes, stirring to coat them in the curry paste.
- Add Liquids: Pour in the coconut milk and chicken broth. Stir in the fish sauce and palm sugar. Bring the mixture to a simmer and cook for 10 minutes.
- Add Vegetables: Add the bell pepper, zucchini, and Thai eggplants (if using). Continue to simmer for another 5-7 minutes until the vegetables are tender.
- Finish the Curry: Stir in the basil leaves, kaffir lime leaves (if using), and lime juice. Adjust seasoning to taste.
- Serve: Serve the curry hot over steamed jasmine rice and garnish with fresh cilantro.
