  • 2 racks of beef or lamb ribs (about 4 pounds), halal-certified
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon salt

For the Sweet and Spicy BBQ Sauce:

  • 1 cup ketchup
  • 1/4 cup honey
  • 2 tablespoons brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Worcestershire sauce (halal-certified)
  • 1 tablespoon hot sauce (adjust to taste)
  • 2 cloves garlic, minced
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon chili powder

Instructions

  1. Prepare the Ribs:
    • Preheat your oven to 300°F (150°C) if baking.
    • Remove the membrane from the back of the ribs. Pat the ribs dry with a paper towel.
    • In a small bowl, mix garlic powder, onion powder, smoked paprika, chili powder, black pepper, and salt.
    • Rub the spice mixture generously over both sides of the ribs.
  2. Cook the Ribs:
    • Oven Method: Wrap the ribs tightly in aluminum foil and place them on a baking sheet. Bake for 2.5 to 3 hours, or until tender.
    • Grill Method: Preheat the grill to medium heat. Grill the ribs over indirect heat, covered, for about 2.5 hours, turning occasionally.
  3. Prepare the BBQ Sauce:
    • While the ribs cook, combine all BBQ sauce ingredients in a saucepan. Simmer over medium heat for 10-15 minutes, stirring occasionally, until slightly thickened.
  4. Finish the Ribs:
    • Remove the ribs from the oven or grill. Increase the grill heat to medium-high or preheat your broiler.
    • Brush the ribs generously with the BBQ sauce on both sides.
    • Grill or broil for 5-7 minutes, turning once, until the sauce caramelizes and the edges are slightly charred.
  5. Serve:
    • Let the ribs rest for 5 minutes. Cut into portions and serve with extra BBQ sauce on the side.
