Instructions
- Preheat the Oven:
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
- Season the Cauliflower:
- In a large bowl, toss the cauliflower florets with olive oil, smoked paprika, cumin, chili powder, turmeric, cayenne pepper (if using), salt, and pepper. Ensure the florets are evenly coated with the spice mixture.
- Roast the Cauliflower:
- Spread the seasoned cauliflower evenly on the prepared baking sheet. Roast in the preheated oven for 25-30 minutes, flipping halfway, until the cauliflower is golden and slightly crispy.
- Make the Tahini Dressing:
- In a small bowl, whisk together tahini, lemon juice, olive oil, minced garlic, and a pinch of salt. Gradually add water, one tablespoon at a time, until the dressing reaches a smooth, pourable consistency.
- Assemble and Serve:
- Transfer the roasted cauliflower to a serving dish. Drizzle generously with the creamy tahini dressing. Garnish with chopped parsley and toasted sesame seeds.
Notes
