Ingredients

Scale
  • 1 lb flank steak
  • 2 tablespoons olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 large sweet onion, sliced
  • 1/4 cup fresh cilantro, chopped
  • 4 flour tortillas (8-inch)
  • 2 teaspoons ground cumin
  • 2 teaspoons chili powder
  • Juice of 1 lime (about 2 tablespoons)
  • Salt and pepper to taste

Instructions

  1. 1. **Marinate the Steak**: In a bowl, mix lime juice, cumin, chili powder, salt, and pepper. Add flank steak and coat well. Marinate for at least 30 minutes.
  2. 2. **Sauté the Vegetables**: Heat olive oil in a skillet over medium-high heat. Add sliced bell peppers and onion; sauté for 5-7 minutes until softened.
  3. 3. **Cook the Steak**: Remove veggies from the pan. In the same skillet over high heat, cook marinated steak strips for about 3-4 minutes per side until browned.
  4. 4. **Combine Ingredients**: Return the sautéed veggies to the skillet with cooked steak and stir gently to combine.
  5. 5. **Assemble Fajitas**: Warm tortillas in another pan for about a minute on each side. Fill each tortilla with steak and veggie mixture; garnish with fresh cilantro and any desired toppings.
  6. 6. **Serve and Enjoy**: Serve immediately while warm.
