Instructions

  • Prepare the Chicken:
    • Season both sides of the chicken breasts with garlic powder, Italian seasoning, salt, and black pepper.
    • Heat olive oil in a large skillet over medium heat. Cook the chicken for 4-5 minutes per side, or until golden brown and fully cooked. Remove from the skillet and let rest for 5 minutes, then slice into strips.
  • Cook the Pasta:
    • Bring a large pot of salted water to a boil. Cook the fettuccine according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the rest and set the pasta aside.
  • Make the Alfredo Sauce:
    • In the same skillet used for the chicken, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
    • Pour in the heavy cream and stir gently, bringing it to a low simmer. Gradually add the Parmesan cheese, stirring continuously until melted and smooth.
    • Season the sauce with salt, black pepper, and a pinch of nutmeg if using. If the sauce is too thick, add a splash of the reserved pasta water to achieve the desired consistency.
  • Combine:
    • Add the cooked pasta to the skillet, tossing it in the sauce until well coated. Gently fold in the sliced chicken.
