These Roasted Garlic and Herb Mashed Potatoes are rich, creamy, and infused with the sweet, mellow flavor of roasted garlic and fresh herbs. Ingredients

  • 2 lbs Yukon Gold or Russet potatoes, peeled and cubed
  • 1 head garlic
  • 2 tablespoons olive oil
  • 1/2 cup unsalted butter, softened
  • 1/2 cup heavy cream (or milk for a lighter option)
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped
  • Salt and black pepper, to taste

Instructions

  1. Roast the Garlic:
    • Preheat your oven to 400°F (200°C).
    • Slice the top off the garlic head to expose the cloves. Drizzle with olive oil, wrap in foil, and roast for 35-40 minutes, or until the cloves are soft and golden. Let cool slightly, then squeeze the garlic cloves into a small bowl and mash into a paste.
  2. Cook the Potatoes:
    • Place the cubed potatoes in a large pot and cover with water. Add a pinch of salt and bring to a boil.
    • Reduce heat and simmer for 15-20 minutes, or until the potatoes are tender when pierced with a fork. Drain and return to the pot.
  3. Mash the Potatoes:
    • Add the roasted garlic paste, butter, and heavy cream to the potatoes. Mash until smooth and creamy using a potato masher or an electric hand mixer.
    • Stir in parsley and chives, and season with salt and black pepper to taste.
  4. Serve:
    • Transfer the mashed potatoes to a serving bowl, garnish with additional herbs if desired, and serve warm.
