Ingredients
- 2 lbs Yukon Gold potatoes
- 1 head roasted garlic
- 4 tablespoons unsalted butter
- 1/2 cup heavy cream
- 2 tablespoons fresh chopped herbs (parsley, rosemary, or thyme)

Instructions
- Preheat your oven to 400°F (200°C). Cut the top off a head of garlic, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
- Peel and chop the potatoes into even chunks. Boil in salted water for about 15-20 minutes until fork-tender.
