  • 2 lbs Yukon Gold potatoes
  • 1 head roasted garlic
  • 4 tablespoons unsalted butter
  • 1/2 cup heavy cream
  • 2 tablespoons fresh chopped herbs (parsley, rosemary, or thyme)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Cut the top off a head of garlic, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
  2. Peel and chop the potatoes into even chunks. Boil in salted water for about 15-20 minutes until fork-tender.
  3. Drain the potatoes and combine them in a mixing bowl with roasted garlic cloves (squeezed out of skins), butter, heavy cream, fresh herbs, salt, and pepper.
  4. Mash until smooth or desired consistency is reached. Adjust seasoning as needed.
  5. Serve warm, garnished with additional herbs if desired.
