- Salt and black pepper, to taste
- 1 tbsp fresh lemon juice
- 2 tbsp chopped fresh parsley
- Grated Parmesan cheese (optional, for garnish)
Instructions
- Prepare Zucchini Noodles:
- Use a spiralizer or vegetable peeler to create zucchini noodles. Set aside.
- Cook the Shrimp:
- Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
- Add the shrimp, season with salt, pepper, and red pepper flakes (if using), and cook for 2-3 minutes per side, or until the shrimp are pink and opaque.
- Remove the shrimp from the skillet and set them aside.
- Prepare the Garlic Butter Sauce:
- In the same skillet, add the remaining tablespoon of butter and minced garlic. Sauté for about 30 seconds, until fragrant, being careful not to burn the garlic.
- Cook the Zucchini Noodles:
- Add the zucchini noodles to the skillet and cook for 2-3 minutes, just until they begin to soften but still retain some texture.
- Combine Shrimp and Zucchini Noodles:
- Return the cooked shrimp to the skillet with the zucchini noodles. Toss to combine, allowing the shrimp to heat through and the noodles to absorb the garlic butter sauce.
- Drizzle with fresh lemon juice and stir to combine.
- Garnish and Serve:
