  • 1/4 tsp red pepper flakes (optional, for heat)
  • Salt and black pepper, to taste
  • 1 tbsp fresh lemon juice
  • 2 tbsp chopped fresh parsley
  • Grated Parmesan cheese (optional, for garnish)

Instructions

  1. Prepare Zucchini Noodles:
    • Use a spiralizer or vegetable peeler to create zucchini noodles. Set aside.
  2. Cook the Shrimp:
    • Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
    • Add the shrimp, season with salt, pepper, and red pepper flakes (if using), and cook for 2-3 minutes per side, or until the shrimp are pink and opaque.
    • Remove the shrimp from the skillet and set them aside.
  3. Prepare the Garlic Butter Sauce:
    • In the same skillet, add the remaining tablespoon of butter and minced garlic. Sauté for about 30 seconds, until fragrant, being careful not to burn the garlic.
  4. Cook the Zucchini Noodles:
    • Add the zucchini noodles to the skillet and cook for 2-3 minutes, just until they begin to soften but still retain some texture.
  5. Combine Shrimp and Zucchini Noodles:
    • Return the cooked shrimp to the skillet with the zucchini noodles. Toss to combine, allowing the shrimp to heat through and the noodles to absorb the garlic butter sauce.
    • Drizzle with fresh lemon juice and stir to combine.
  6. Garnish and Serve:
    • Remove from heat, sprinkle with fresh parsley, and optionally garnish with grated Parmesan cheese.
