  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Prepare the Chicken:
    • Season the chicken breasts with salt, pepper, and a pinch of cinnamon.
  2. Sear the Chicken:
    • Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 3-4 minutes per side until golden brown. Remove from the skillet and set aside.
  3. Make the Glaze:
    • In the same skillet, add the pomegranate juice, honey, balsamic vinegar, garlic, and rosemary. Bring the mixture to a simmer over medium heat.
    • Stir occasionally and let the glaze reduce by half, about 5-7 minutes.
  4. Cook the Chicken in the Glaze:
    • Return the chicken breasts to the skillet, spooning the glaze over them.
    • Reduce the heat to low and cook for another 8-10 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C).
  5. Garnish and Serve:
    • Transfer the chicken to serving plates and drizzle with the remaining glaze.
    • Garnish with fresh pomegranate seeds and parsley. Serve with your favorite sides.
