    • 1/4 teaspoon cayenne pepper (optional)
  • For the Ribs:
    • 2 racks of pork baby back ribs (about 4 pounds)
    • 1/4 cup yellow mustard (for coating)
  • For the BBQ Sauce:
    • 1 cup barbecue sauce (store-bought or homemade)
    • 2 tablespoons honey (optional, for sweetness)

Instructions

  1. Prepare the Ribs:
    • Preheat your grill to 275°F (135°C) for indirect heat.
    • Remove the membrane from the back of the ribs for better seasoning penetration. Rinse and pat the ribs dry with paper towels.
    • Coat the ribs with a thin layer of yellow mustard. This helps the dry rub stick and enhances the flavor.
  2. Apply the Dry Rub:
    • In a small bowl, mix all the dry rub ingredients. Generously sprinkle the rub over both sides of the ribs, pressing it into the meat.
  3. Grill the Ribs:
    • Place the ribs bone-side down on the grill grates over indirect heat. Close the lid and cook for 2 1/2 to 3 hours, checking occasionally to maintain the temperature.
  4. Add the BBQ Sauce:
    • In the last 30 minutes of cooking, brush the ribs with BBQ sauce. Flip and glaze the other side for a sticky, caramelized coating.
  5. Check for Doneness:
    • The ribs are ready when the meat pulls away easily from the bones, or when the internal temperature reaches 190°F (88°C).
  6. Serve:
    • Let the ribs rest for 10 minutes before cutting into individual portions. Serve with extra BBQ sauce on the side and your favorite summer sides.
