  • 1 lb (450g) baby carrots or regular carrots, peeled and cut into sticks
  • 2 tablespoons maple syrup
  • 1 tablespoon olive oil
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste

Instructions

  • Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  • Prepare the Carrots: In a bowl, toss the carrots with olive oil, grated ginger, thyme, maple syrup, salt, and pepper until evenly coated.
  • Roast the Carrots: Spread the carrots in a single layer on the prepared baking sheet. Roast for 20-25 minutes, or until the carrots are tender and lightly caramelized, stirring halfway through to ensure even roasting.
  • Serve: Once roasted, remove the carrots from the oven and transfer them to a serving dish. Optionally, garnish with additional thyme or a drizzle of maple syrup before serving.
