Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 3 tablespoons olive oil (divided)
  • Juice of 2 lemons
  • Zest of 1 lemon
  • 3 garlic cloves, minced
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh rosemary, chopped
  • 1 teaspoon Dijon mustard
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon slices (for garnish)

Instructions

  1. Prepare the Marinade:
    • In a small bowl, whisk together 2 tablespoons olive oil, lemon juice, lemon zest, garlic, thyme, rosemary, Dijon mustard, salt, and black pepper.
  2. Marinate the Chicken:
    • Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring it is well-coated.
    • Marinate in the refrigerator for at least 30 minutes or up to 2 hours.
  3. Cook the Chicken:
    • Heat the remaining 1 tablespoon olive oil in a large skillet over medium heat.
    • Remove the chicken from the marinade, letting excess drip off.
    • Cook the chicken for 5-7 minutes per side or until golden brown and cooked through (internal temperature of 165°F). Alternatively, bake in a preheated oven at 375°F for 20-25 minutes.
  4. Serve:
    • Transfer the chicken to serving plates. Garnish with fresh parsley and lemon slices.

Notes

  • For extra flavor, baste the chicken with the marinade while cooking.
  • Serve with roasted vegetables or a light salad for a complete meal.
  • Use chicken thighs if preferred for a juicier option.
