- 1 tablespoon vegetable oil
- 1–2 Scotch bonnet peppers, finely chopped (adjust for heat level)
- 2 cloves garlic, minced
- 1 small onion, finely chopped
Instructions
- Mix Dry Spices:
- In a bowl, combine allspice, cinnamon, nutmeg, smoked paprika, garlic powder, onion powder, thyme, cayenne pepper, black pepper, brown sugar, and salt. Mix well.
- Prepare the Marinade:
- Add soy sauce, lime juice, vegetable oil, chopped Scotch bonnet peppers, minced garlic, and onion to the spice blend. Stir to create a thick paste.
- Marinate the Chicken:
- Rub the spice mixture evenly over chicken pieces (bone-in or boneless). Ensure the chicken is well-coated.
- Cover and refrigerate for at least 2 hours, preferably overnight, for maximum flavor.
- Cook the Jerk Chicken:
- Grill: Preheat the grill to medium heat. Cook chicken for 10-15 minutes per side, or until fully cooked (internal temperature of 165°F).
- Bake: Preheat oven to 375°F. Place chicken on a baking sheet and bake for 35-40 minutes, turning halfway through.
- Smoke: Use a smoker with pimento wood or hickory for authentic Jamaican flavor. Smoke chicken at 225°F for 3-4 hours.
