- 3 boneless chicken breasts (about 1 lb), diced
- 1 medium onion, finely chopped
- 4 cloves garlic, minced
- 1 cup cooked rice (brown or white)
- 1 cup shredded mozzarella cheese
- 2 tsp cumin
- 2 tsp paprika
- 1 cup low-sodium chicken broth
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Sauté onions until translucent. Add garlic; cook until fragrant.
