Ingredients

  • Large button mushrooms
  • Fresh baby spinach
  • Feta cheese
  • Garlic
  • Breadcrumbs
  • Olive oil
  • Parmesan cheese
  • Salt and pepper

Instructions

  1. Preheat your oven to 375°F (190°C). Clean the mushrooms and carefully remove the stems, chopping them finely.
  2. In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, then add chopped spinach and cook until wilted (about 2 minutes).
  3. In a bowl, mix the sautéed spinach, chopped mushroom stems, crumbled feta, breadcrumbs, salt, and pepper.
  4. Generously stuff each mushroom cap with the mixture.
  5. Place stuffed mushrooms on a baking sheet and drizzle lightly with olive oil. Bake for 20-25 minutes until golden brown.
