- 3 tbsp olive oil
- 2 tbsp melted butter
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese

- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Boil the Potatoes:
- Preheat the oven to 425°F (220°C).
- In a large pot, boil the baby potatoes in salted water for about 15–20 minutes or until fork-tender.
- Drain and let them cool slightly.
- Smash the Potatoes:
- Arrange the boiled potatoes on a baking sheet lined with parchment paper.
- Use the bottom of a glass or a potato masher to gently smash each potato flat.
- Season the Potatoes:
- Drizzle olive oil and melted butter over the smashed potatoes.
- Sprinkle minced garlic, Parmesan cheese, thyme, salt, and pepper evenly.
- Bake Until Crispy:
- Roast in the preheated oven for 20–25 minutes, or until the edges are golden and crispy.
- Garnish and Serve:
- Remove from the oven and sprinkle with fresh parsley.
- Serve immediately and enjoy!
