  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1 cup freshly grated parmesan cheese
  • 2 cups fresh spinach
  • 8 oz pasta of choice (fettuccine or penne)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium heat. Sear the chicken for about 5-7 minutes on each side until golden brown. Remove and let rest.
  2. In the same skillet, add minced garlic and sauté for 30 seconds until fragrant. Add chopped sun-dried tomatoes and stir.
  3. Pour in the heavy cream, stirring to combine while scraping any bits from the bottom of the pan. Bring to a gentle simmer and mix in the grated parmesan until melted.
  4. Add fresh spinach and stir until wilted. Meanwhile, cook pasta according to package instructions; drain and toss into the skillet with the creamy sauce.
  5. Slice the chicken and place it on top of your pasta dish. Garnish with additional parmesan as desired.
