  • 2 pounds beef chuck, cut into 1-inch cubes
  • 2 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 4 cups beef broth
  • 1 cup red wine (optional, or use additional broth)
  • 3 large carrots, peeled and sliced
  • 3 medium potatoes, peeled and cubed
  • 2 celery stalks, chopped
  • 1 cup frozen peas
  • 2 tablespoons tomato paste
  • 1 teaspoon Worcestershire sauce
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste

Instructions

  1. Brown the Beef:
    • Toss the beef cubes with flour, salt, and pepper.
    • Heat olive oil in a large pot over medium-high heat. Brown the beef in batches until golden on all sides. Remove and set aside.
  2. Sauté the Aromatics:
    • In the same pot, add the onion and sauté for 3-4 minutes until softened.
    • Stir in garlic and cook for 1 minute until fragrant.
  3. Deglaze and Simmer:
    • Stir in tomato paste and cook for 1 minute.
    • Pour in red wine (if using) and scrape the bottom of the pot to deglaze.
    • Return the beef to the pot and add beef broth, Worcestershire sauce, bay leaf, and thyme. Bring to a boil, then reduce heat and simmer for 45 minutes.
  4. Add Vegetables:
    • Add carrots, potatoes, and celery to the pot. Simmer for another 30 minutes, or until the vegetables are tender.
  5. Finish and Serve:
    • Stir in frozen peas and cook for 5 more minutes.
    • Adjust salt and pepper to taste. Discard the bay leaf before serving.
