- 1 cup green or brown lentils
- 2 medium carrots, diced
- 2 stalks celery, chopped
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 1 can (14.5 oz) diced tomatoes
- 4 cups vegetable broth
- 1 tsp ground cumin
- 1 tsp dried thyme
- 1 bay leaf
Instructions
- Chop the onions, carrots, and celery into uniform pieces.
- In a large pot, heat 2 tablespoons of olive oil over medium heat and sauté the onions until translucent (about 5 minutes). Add minced garlic and cook for an additional minute.
- Stir in rinsed lentils, diced tomatoes, cumin, and thyme; let cook for 2 minutes.
- Pour in vegetable broth and add the bay leaf. Bring to a boil, then reduce heat and simmer for 25-30 minutes until lentils are tender.
- Taste and adjust seasoning as needed before serving.
