Description

Ingredients

  • 1 cup green or brown lentils
  • 2 medium carrots, diced
  • 2 stalks celery, chopped
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 tsp ground cumin
  • 1 tsp dried thyme
  • 1 bay leaf

Instructions

  1. Chop the onions, carrots, and celery into uniform pieces.
  2. In a large pot, heat 2 tablespoons of olive oil over medium heat and sauté the onions until translucent (about 5 minutes). Add minced garlic and cook for an additional minute.
  3. Stir in rinsed lentils, diced tomatoes, cumin, and thyme; let cook for 2 minutes.
  4. Pour in vegetable broth and add the bay leaf. Bring to a boil, then reduce heat and simmer for 25-30 minutes until lentils are tender.
  5. Taste and adjust seasoning as needed before serving.
