Ingredients
Scale
For the Steak:
- 2 halal ribeye steaks (or your preferred cut)
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
For the Roasted Veggies:
- 1 cup baby potatoes, halved
- 1 cup carrots, sliced
- 1 zucchini, sliced
- 1 red bell pepper, chopped
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Season the Vegetables: In a large bowl, toss the baby potatoes, carrots, zucchini, and red bell pepper with olive oil, smoked paprika, garlic powder, salt, and pepper. Spread them out in a single layer on the prepared baking sheet.
- Roast the Vegetables: Roast the vegetables in the preheated oven for 25-30 minutes, or until they are tender and golden brown, stirring halfway through.
- Prepare the Steak: While the veggies are roasting, pat the steaks dry with a paper towel. Rub them with olive oil, then season with salt, black pepper, garlic powder, and dried thyme.
- Cook the Steak: Heat a skillet over medium-high heat. Add the steaks and cook for 3-4 minutes per side for medium-rare, or to your desired doneness. Remove the steaks from the skillet and let them rest for 5 minutes.
- Serve: Plate the steak alongside the roasted veggies. Serve with your favorite sauce or a squeeze of lemon juice for added flavor.
Notes
- You can customize the vegetable mix based on what’s in season or your personal preference.
- For a richer flavor, add a pat of butter and a sprig of fresh thyme to the skillet while cooking the steaks.
- This meal pairs well with a simple green salad or a side of mashed potatoes.
