  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 cup balsamic vinegar
  • 1 tablespoon maple syrup or honey (optional for sweetness)
  • Fresh basil for garnish (optional)

Instructions

  • Prepare the Eggplant: Preheat your grill to medium-high heat. Brush both sides of the eggplant slices with olive oil and season with salt and pepper.
  • Grill the Eggplant: Place the eggplant slices on the grill and cook for 3-5 minutes per side, or until tender and grill marks appear.
  • Make the Balsamic Glaze: While the eggplant is grilling, in a small saucepan, combine balsamic vinegar and maple syrup (if using). Bring to a simmer over medium heat and cook for 5-7 minutes, stirring occasionally, until the glaze thickens and reduces by half.
  • Serve: Once the eggplant is grilled, remove it from the grill and drizzle with the balsamic glaze. Garnish with fresh basil if desired.

Notes

  • For an extra kick, add a sprinkle of red pepper flakes to the balsamic glaze.

  • If you don’t have a grill, you can use a grill pan or roast the eggplant slices in the oven at 400°F (200°C) for about 20 minutes.
