Instructions
- Prepare the Eggplant: Preheat your grill to medium-high heat. Brush both sides of the eggplant slices with olive oil and season with salt and pepper.
- Grill the Eggplant: Place the eggplant slices on the grill and cook for 3-5 minutes per side, or until tender and grill marks appear.
- Make the Balsamic Glaze: While the eggplant is grilling, in a small saucepan, combine balsamic vinegar and maple syrup (if using). Bring to a simmer over medium heat and cook for 5-7 minutes, stirring occasionally, until the glaze thickens and reduces by half.
- Serve: Once the eggplant is grilled, remove it from the grill and drizzle with the balsamic glaze. Garnish with fresh basil if desired.
