  • 1 pound lean ground turkey
  • 1 cup cooked rice (white or brown)
  • 1 can (15 oz) diced tomatoes (low-sodium)
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Sauté chopped onion until translucent, then add minced garlic and cook until fragrant.
  3. Add ground turkey to the skillet. Cook until browned, breaking it apart as it cooks.

  6. Place stuffed peppers upright in a baking dish. Cover with foil and bake for 30 minutes; remove foil and bake for an additional 10-15 minutes until tops are golden.
