- Chili powder (to taste)

Instructions
- Rinse quinoa under cold water, then cook according to package instructions until fluffy (about 15 minutes).
- Dice the bell pepper, cucumber, and red onion into uniform pieces.
- In a bowl, whisk together olive oil, lemon juice, cumin powder, chili powder, salt, and pepper to make the dressing.
- In a large bowl, combine cooked quinoa, chickpeas, and chopped vegetables. Pour the dressing over the mixture and toss gently to coat.
- Add chopped parsley or cilantro just before serving.
