- 2 large eggplants, sliced into ½-inch rounds
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1½ cups breadcrumbs
- 1 cup grated Parmesan cheese
- 2 tsp dried Italian seasoning
- 1 tsp garlic powder
- Salt and pepper to taste
- 2 cups marinara sauce
- 8 oz fresh mozzarella, sliced
- Fresh basil leaves for garnish
- Olive oil for frying
Instructions
- Prepare Eggplant: Sprinkle eggplant slices with salt and let them sit for 30 minutes to remove excess moisture. Pat dry with a paper towel.
- Bread the Eggplant: Dredge each slice in flour, dip into beaten eggs, then coat with a mixture of breadcrumbs, Parmesan, Italian seasoning, garlic powder, salt, and pepper.
- Fry Eggplant: Heat olive oil in a skillet over medium heat. Fry eggplant slices until golden brown on both sides. Drain on paper towels.
- Assemble Dish: Preheat oven to 375°F (190°C). Spread marinara sauce at the bottom of a baking dish. Layer fried eggplant slices, spoon marinara sauce over each slice, and top with fresh mozzarella slices.
- Bake: Bake for 25–30 minutes, or until cheese is melted and bubbly.
- Serve: Garnish with fresh basil and serve warm.
