- 8 oz short pasta (fusilli or penne)
- 1 can (5 oz) high-quality tuna packed in olive oil
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh parsley, chopped
- 2 tbsp extra virgin olive oil
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Cook the pasta in salted boiling water until al dente (about 8-10 minutes). Drain and rinse under cold water.
- While the pasta cooks, chop the cherry tomatoes, cucumber, red onion, and herbs.
- In a large bowl, combine the drained pasta, veggies, tuna, olive oil, lemon juice, salt, and pepper. Toss gently to mix well.
- Serve immediately or refrigerate for 30 minutes to enhance flavors before serving.
