Ingredients

  • 8 oz short pasta (fusilli or penne)
  • 1 can (5 oz) high-quality tuna packed in olive oil
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp extra virgin olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente (about 8-10 minutes). Drain and rinse under cold water.
  2. While the pasta cooks, chop the cherry tomatoes, cucumber, red onion, and herbs.
  3. In a large bowl, combine the drained pasta, veggies, tuna, olive oil, lemon juice, salt, and pepper. Toss gently to mix well.
  4. Serve immediately or refrigerate for 30 minutes to enhance flavors before serving.
