Instructions
- Preheat your oven to 375°F (190°C).
- Sauté minced garlic in a skillet until fragrant; add fresh spinach and cook until wilted.
- In a bowl, mix sautéed spinach with cream cheese, lemon juice, Parmesan, salt, pepper, and herbs until smooth.
- Place salmon fillets skin-side down on a parchment-lined baking sheet and cut pockets in each fillet.
- Generously stuff each pocket with the spinach mixture.
- Bake for about 20 minutes or until the salmon flakes easily with a fork.
