- 1 lb shrimp (deveined)
- 8 corn or flour tortillas
- 1 ripe mango (diced)
- 1/4 cup red onion (finely chopped)
- 1/4 cup fresh cilantro (chopped)
- Juice of 1 lime
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp extra virgin olive oil
Instructions
- Rinse shrimp under cold water, pat dry, and season with cumin, paprika, salt, and pepper.
- Heat olive oil in a skillet over medium-high heat. Add seasoned shrimp and sauté for 3-4 minutes until pink and opaque.
- In a bowl, combine diced mango, red onion, cilantro, lime juice, salt, and pepper to make the salsa.
- Warm tortillas in a skillet or over an open flame until pliable.
- Assemble tacos by placing sautéed shrimp on each tortilla and topping with mango salsa.
- Serve immediately while warm.
