Ingredients

  • 1 lb shrimp (deveined)
  • 8 corn or flour tortillas
  • 1 ripe mango (diced)
  • 1/4 cup red onion (finely chopped)
  • 1/4 cup fresh cilantro (chopped)
  • Juice of 1 lime
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp extra virgin olive oil

Instructions

  1. Rinse shrimp under cold water, pat dry, and season with cumin, paprika, salt, and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Add seasoned shrimp and sauté for 3-4 minutes until pink and opaque.
  3. In a bowl, combine diced mango, red onion, cilantro, lime juice, salt, and pepper to make the salsa.
  4. Warm tortillas in a skillet or over an open flame until pliable.
  5. Assemble tacos by placing sautéed shrimp on each tortilla and topping with mango salsa.
  6. Serve immediately while warm.
