Instructions

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil. Add linguine and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
  2. Prepare the Shrimp Scampi:
    • Heat olive oil in a large skillet over medium heat. Add the shrimp in a single layer and season with salt and pepper. Cook for 1-2 minutes per side until pink and opaque. Remove shrimp from the skillet and set aside.
  3. Make the Sauce:
    • In the same skillet, add minced garlic and red pepper flakes (if using). Sauté for 1 minute until fragrant.
    • Pour in the white wine (or chicken broth) and simmer for 2-3 minutes, allowing the liquid to reduce slightly.
  4. Combine the Ingredients:
    • Lower the heat and stir in butter and lemon juice until the sauce is smooth. Return the shrimp to the skillet, along with the cooked linguine and reserved pasta water. Toss everything together until the pasta is well-coated in the sauce.
  5. Serve:
    • Garnish with chopped parsley, Parmesan cheese, and lemon wedges. Serve immediately.
