Ingredients

  • 12 oz spaghetti
  • 4 ripe tomatoes, halved
  • 8 garlic cloves, whole
  • 3 tbsp extra virgin olive oil
  • 1 cup fresh basil leaves, torn
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Arrange halved tomatoes and whole garlic cloves on the baking sheet. Drizzle with olive oil, season with salt and pepper, then roast for 25-30 minutes until caramelized.
  3. While roasting, boil salted water in a large pot. Cook spaghetti according to package directions until al dente, reserving some pasta water before draining.
  4. Toss cooked spaghetti with roasted tomatoes and garlic in the pot. Add reserved pasta water gradually for a silky texture.
  5. Gently mix in torn basil leaves, serve hot, and top with grated Parmesan cheese.
