- 12 oz spaghetti
- 4 ripe tomatoes, halved
- 8 garlic cloves, whole
- 3 tbsp extra virgin olive oil
- 1 cup fresh basil leaves, torn
- ½ cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Arrange halved tomatoes and whole garlic cloves on the baking sheet. Drizzle with olive oil, season with salt and pepper, then roast for 25-30 minutes until caramelized.
- While roasting, boil salted water in a large pot. Cook spaghetti according to package directions until al dente, reserving some pasta water before draining.
- Toss cooked spaghetti with roasted tomatoes and garlic in the pot. Add reserved pasta water gradually for a silky texture.
- Gently mix in torn basil leaves, serve hot, and top with grated Parmesan cheese.
