  • 1 lb (450g) ground beef
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1/2 tsp dried thyme
  • 2 medium potatoes, peeled and diced
  • 1/2 cup beef broth
  • 2 pre-made pie crusts (store-bought or homemade)
  • 1 egg, beaten (for brushing the crust)

Instructions

  • Prepare the Filling:
    Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned. Stir in onion, garlic, salt, pepper, paprika, and thyme, cooking until onions soften.
  • Add Potatoes:
    Add diced potatoes to the skillet. Pour in beef broth and cook for 8-10 minutes, stirring occasionally, until the potatoes are tender and the mixture thickens slightly. Remove from heat and let cool.
  • Assemble the Pie:
    Preheat oven to 375°F (190°C). Roll out one pie crust and fit it into a 9-inch pie dish. Fill with the beef and potato mixture. Cover with the second pie crust, sealing the edges and cutting small slits on top to release steam.
  • Bake:
    Brush the crust with the beaten egg. Bake for 35-40 minutes, or until the crust is golden brown. Allow to cool slightly before serving.
