  • 1 cup frozen or canned corn
  • 1 can black beans (rinsed)
  • 2 cups shredded sharp cheddar cheese
  • 1 cup crushed tortilla chips

  • sour cream for serving (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, sauté diced onion until translucent. Add ground beef, chili powder, and cumin; cook until browned.
  3. Stir in corn and black beans; cook for an additional 3-4 minutes.
  4. Pour the mixture into a greased baking dish. Top with crushed tortilla chips and shredded cheese.
  5. Bake uncovered for 25-30 minutes until bubbly and golden.
  6. Let cool slightly before serving with a dollop of sour cream if desired.
