- 1 cup frozen or canned corn
- 1 can black beans (rinsed)
- 2 cups shredded sharp cheddar cheese
- 1 cup crushed tortilla chips

- sour cream for serving (optional)
Instructions
- Preheat oven to 350°F (175°C).
- In a large skillet, sauté diced onion until translucent. Add ground beef, chili powder, and cumin; cook until browned.
- Stir in corn and black beans; cook for an additional 3-4 minutes.
- Pour the mixture into a greased baking dish. Top with crushed tortilla chips and shredded cheese.
- Bake uncovered for 25-30 minutes until bubbly and golden.
- Let cool slightly before serving with a dollop of sour cream if desired.
