Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar, divided
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup fresh strawberries, pureed
  • 1 tbsp lemon juice

Instructions

  1. Preheat the oven to 325°F (160°C). Combine graham cracker crumbs, melted butter, and ¼ cup sugar in a bowl. Press mixture into the bottom of a springform pan and bake for 10 minutes.
  2. In a large bowl, beat softened cream cheese until smooth. Gradually add the remaining sugar, then mix in sour cream and vanilla extract. Add eggs one at a time on low speed until just blended.
  3. Puree fresh strawberries with lemon juice. Gently fold half into the cream cheese mixture, reserving the rest for swirling.
  4. Pour half of the cream cheese mixture over the crust. Add spoonfuls of reserved strawberry puree on top and swirl gently with a knife.
  5. Bake for 55-60 minutes until edges are set but center jiggles slightly. Let cool in the oven with the door ajar for 1 hour before chilling in the fridge for at least four hours.
