- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¾ cup granulated sugar, divided
- 16 oz cream cheese, softened
- 1 cup sour cream
- 1 tsp vanilla extract
- 3 large eggs
- 1 cup fresh strawberries, pureed
- 1 tbsp lemon juice
Instructions
- Preheat the oven to 325°F (160°C). Combine graham cracker crumbs, melted butter, and ¼ cup sugar in a bowl. Press mixture into the bottom of a springform pan and bake for 10 minutes.
- In a large bowl, beat softened cream cheese until smooth. Gradually add the remaining sugar, then mix in sour cream and vanilla extract. Add eggs one at a time on low speed until just blended.
- Puree fresh strawberries with lemon juice. Gently fold half into the cream cheese mixture, reserving the rest for swirling.
- Pour half of the cream cheese mixture over the crust. Add spoonfuls of reserved strawberry puree on top and swirl gently with a knife.
- Bake for 55-60 minutes until edges are set but center jiggles slightly. Let cool in the oven with the door ajar for 1 hour before chilling in the fridge for at least four hours.
