  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 1 cup shredded Mexican blend cheese (or cheddar cheese)
  • 4 large flour tortillas
  • 2 tablespoons butter or olive oil
  • Optional toppings: sour cream, guacamole, salsa, or chopped cilantro

Instructions

  1. Prepare the Chicken Filling:
    • In a bowl, mix the cooked chicken with chili powder, cumin, garlic powder, smoked paprika, salt, and pepper. Adjust seasoning to taste.
  2. Assemble the Quesadillas:
    • Lay a tortilla flat on a clean surface.
    • Sprinkle 1/4 cup of cheese evenly over half of the tortilla. Top with 1/2 cup of the seasoned chicken and another 1/4 cup of cheese.
    • Fold the tortilla in half to enclose the filling. Repeat with the remaining tortillas.
  3. Cook the Quesadillas:
    • Heat a large skillet over medium heat and melt 1/2 tablespoon of butter or drizzle 1/2 tablespoon of olive oil.
    • Place a quesadilla in the skillet and cook for 2-3 minutes on each side until golden brown and the cheese is melted. Repeat with the remaining quesadillas.
  4. Serve:
    • Slice each quesadilla into wedges and serve hot with your choice of toppings, such as sour cream, guacamole, salsa, or chopped cilantro.
