- 4 large flour tortillas
- 2 tablespoons butter or olive oil
- Optional toppings: sour cream, guacamole, salsa, or chopped cilantro
Instructions
- Prepare the Chicken Filling:
- In a bowl, mix the cooked chicken with chili powder, cumin, garlic powder, smoked paprika, salt, and pepper. Adjust seasoning to taste.
- Assemble the Quesadillas:
- Lay a tortilla flat on a clean surface.
- Sprinkle 1/4 cup of cheese evenly over half of the tortilla. Top with 1/2 cup of the seasoned chicken and another 1/4 cup of cheese.
- Fold the tortilla in half to enclose the filling. Repeat with the remaining tortillas.
- Cook the Quesadillas:
- Heat a large skillet over medium heat and melt 1/2 tablespoon of butter or drizzle 1/2 tablespoon of olive oil.
