- 3–4 boneless, skinless chicken breasts
- 2 cloves fresh garlic
- Flour tortillas
- 2 cups shredded Monterey Jack and cheddar cheese
- 1 cup white sauce (cream sauce)
- 1 can green chiles
- 1 onion
- Fresh cilantro (optional)
Instructions
- Preheat the oven to 350°F (175°C). Season the chicken breasts with salt and pepper and cook in a skillet over medium heat until no longer pink, about 6-7 minutes per side.
- Remove the chicken and sauté diced onions and minced garlic in the same skillet until soft and translucent, roughly 2-3 minutes.
- Chop the cooked chicken into bite-sized pieces. In a bowl, combine the chicken with sautéed onions, green chiles, half of the shredded cheese, and a splash of white sauce.
- Spoon about 1/4 cup of filling onto each tortilla, roll tightly, and place seam-side down in a greased baking dish.
- Pour remaining white sauce over the enchiladas and sprinkle with the rest of the cheese.
- Bake uncovered for 25-30 minutes or until bubbly and golden brown.
