Description

Delight in these easy chicken enchiladas with white sauce, featuring tender chicken and melted cheese enveloped in soft tortillas, perfect for family dinners or gatherings.

Ingredients

Scale
  • 34 boneless, skinless chicken breasts
  • 2 cloves fresh garlic
  • Flour tortillas
  • 2 cups shredded Monterey Jack and cheddar cheese
  • 1 cup white sauce (cream sauce)
  • 1 can green chiles
  • 1 onion
  • Fresh cilantro (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Season the chicken breasts with salt and pepper and cook in a skillet over medium heat until no longer pink, about 6-7 minutes per side.
  2. Remove the chicken and sauté diced onions and minced garlic in the same skillet until soft and translucent, roughly 2-3 minutes.
  3. Chop the cooked chicken into bite-sized pieces. In a bowl, combine the chicken with sautéed onions, green chiles, half of the shredded cheese, and a splash of white sauce.
  4. Spoon about 1/4 cup of filling onto each tortilla, roll tightly, and place seam-side down in a greased baking dish.
  5. Pour remaining white sauce over the enchiladas and sprinkle with the rest of the cheese.
  6. Bake uncovered for 25-30 minutes or until bubbly and golden brown.
