Ingredients

  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 yellow onion, chopped
  • 3 garlic cloves, minced
  • 6 cups low-sodium vegetable broth
  • 2 bay leaves
  • 1 teaspoon cumin powder
  • Olive oil for sautéing
  • Fresh parsley for garnish

Instructions

  1. Prep your veggies by dicing the onion, carrots, and celery.
  2. In a large pot, heat olive oil over medium heat. Sauté the veggies until softened (about 5 minutes).
  3. Add minced garlic, cumin powder, and optional red pepper flakes; sauté for another minute until fragrant.
  4. Stir in rinsed lentils and pour in vegetable broth along with bay leaves. Bring to a boil, then reduce heat to a gentle simmer.
  5. Cook uncovered for 30-35 minutes until lentils are tender but not mushy. Stir occasionally.
  6. Remove bay leaves before tasting; adjust seasoning as needed.
  7. Serve hot garnished with fresh parsley.
