- 2 celery stalks, diced

- 6 cups low-sodium vegetable broth
- 2 bay leaves

- Olive oil for sautéing
- Fresh parsley for garnish
Instructions
- Prep your veggies by dicing the onion, carrots, and celery.
- In a large pot, heat olive oil over medium heat. Sauté the veggies until softened (about 5 minutes).
- Add minced garlic, cumin powder, and optional red pepper flakes; sauté for another minute until fragrant.
- Stir in rinsed lentils and pour in vegetable broth along with bay leaves. Bring to a boil, then reduce heat to a gentle simmer.
