- 2 stalks celery, diced

- 4 cups low-sodium vegetable broth
- 1 tsp dried thyme
- 1 tsp cumin
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onions, carrots, and celery until soft.
- Add minced garlic, thyme, and cumin; cook until fragrant.
- Stir in rinsed lentils and vegetable broth. Bring to a boil then reduce heat to simmer for 25-30 minutes until lentils are tender.
- Season with salt and pepper to taste. For a creamier texture, blend part of the soup using an immersion blender.
- Serve hot, garnished with fresh herbs or croutons.
