Ingredients

  • 1 cup green or brown lentils
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 yellow onion, chopped
  • 3 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 1 tsp dried thyme
  • 1 tsp cumin
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions, carrots, and celery until soft.
  2. Add minced garlic, thyme, and cumin; cook until fragrant.
  3. Stir in rinsed lentils and vegetable broth. Bring to a boil then reduce heat to simmer for 25-30 minutes until lentils are tender.
  4. Season with salt and pepper to taste. For a creamier texture, blend part of the soup using an immersion blender.
  5. Serve hot, garnished with fresh herbs or croutons.
