Ingredients
- 2 cups cooked chicken, shredded (rotisserie chicken works great)
- 1 can (10 oz) red enchilada sauce
- 8 small flour tortillas (or corn tortillas for a gluten-free option)
- 1 1/2 cups shredded cheddar or Mexican blend cheese
Instructions
- Preheat your oven to 375°F (190°C).
- Pour 1/4 cup of enchilada sauce into the bottom of a 9×13-inch baking dish and spread it evenly.
- Place the tortillas on a flat surface. Add 2-3 tablespoons of shredded chicken to the center of each tortilla. Top with 1 tablespoon of cheese. Roll up the tortillas tightly and place them seam-side down in the baking dish.
- Once all tortillas are in the dish, pour the remaining enchilada sauce over the top, making sure to cover each tortilla.
- Sprinkle the remaining shredded cheese evenly over the top.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly and the edges of the tortillas are lightly golden.
- Let cool for 5 minutes, then slice and serve. Enjoy!
