  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 1 tsp vanilla extract
  • 2 cups fresh strawberries, sliced
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 325°F (160°C) and grease an 8-inch springform pan or line it with parchment paper.
  2. In a bowl, mix graham cracker crumbs and melted butter. Press firmly into the bottom of the prepared pan.
  3. Bake the crust for about 10 minutes until golden. Let it cool.
  4. In a large bowl, beat cream cheese until smooth. Gradually add sugar and sour cream, mixing until combined. Stir in vanilla extract.
  5. Pour the filling over the cooled crust; smooth out the top with a spatula.
  6. Bake for 50–60 minutes until set but slightly jiggly in the center. Turn off the oven and crack open the door to cool gradually inside.
  7. Refrigerate for at least four hours or overnight before serving. Top with sliced strawberries and dust with powdered sugar if desired.
