Instructions
- Preheat oven to 350°F (175°C). Mix graham cracker crumbs, melted butter, and brown sugar in a bowl. Press into muffin tin cups lined with paper liners and bake for 5 minutes.
- Beat softened cream cheese until smooth. Gradually add sour cream and sugar until creamy. Mix in eggs one at a time, then stir in vanilla extract.
- Place pineapple rings on each crust and pour the cheesecake filling over them.
- Bake for 20-25 minutes until set but slightly jiggly in the center. Cool completely before chilling in the refrigerator.
