Ingredients

  • Unsalted Butter
  • Granulated Sugar
  • Cream Cheese

Instructions

  1. Preheat oven to 325°F (160°C) and grease a 9-inch springform pan.
  2. In a bowl, mix crushed graham crackers, melted butter, and sugar; press into the bottom of the pan for the crust.
  3. In another bowl, beat cream cheese with granulated sugar until smooth; add sour cream, lemon juice, and zest, mixing well.
  4. Incorporate eggs one at a time until smooth; avoid overmixing.
  5. For raspberry swirl, heat raspberries with sugar until saucy; strain if desired.
  6. Pour half of the cheesecake filling over the crust; drizzle raspberry sauce on top and add remaining filling. Use a knife to create swirls.
  7. Bake for 50-60 minutes until edges are firm but center jiggles slightly.
  8. Cool in the oven with the door ajar for 1 hour, then refrigerate for at least 4 hours or overnight before serving.
