For the fritters:

  • 2 medium zucchinis, grated
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg, beaten
  • 1/2 tsp garlic powder
  • 1/4 tsp ground cumin
  • Salt and pepper to taste
  • Olive oil for frying

For the garlic yogurt dip:

  • 1/2 cup plain Greek yogurt
  • 1 clove garlic, minced
  • 1 tbsp fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Grate the zucchinis and place them in a clean kitchen towel to squeeze out excess moisture.
  2. In a bowl, combine the grated zucchini, breadcrumbs, Parmesan cheese, beaten egg, garlic powder, cumin, salt, and pepper. Mix until fully incorporated.
  3. Heat a tablespoon of olive oil in a skillet over medium heat. Scoop about 2 tablespoons of the fritter mixture and form it into a patty. Fry in the skillet for 3-4 minutes per side until golden brown and crispy.
  4. Remove fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.
  5. For the dip, combine Greek yogurt, minced garlic, lemon juice, salt, and pepper in a small bowl. Stir well to combine.
  6. Serve the fritters warm with the garlic yogurt dip.

Notes

  • If the mixture feels too wet, add more breadcrumbs to achieve the right consistency.
