Ingredients
- 4 large portobello mushrooms, stems removed and gills scraped out
- 1 tbsp olive oil
- 1/2 cup breadcrumbs (preferably panko)
- 1/4 cup grated Parmesan cheese
- 1/4 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 2 cups fresh spinach, chopped
- 1/4 cup cream cheese, softened
- 1 tbsp fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Brush the portobello mushrooms with olive oil and place them gill side up on a baking sheet lined with parchment paper.
- In a large skillet, sauté the minced garlic over medium heat until fragrant (about 1 minute). Add the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat.
- In a bowl, combine the spinach mixture, breadcrumbs, Parmesan, mozzarella, cream cheese, and parsley. Season with salt and pepper.
- Spoon the stuffing mixture evenly into the mushroom caps. Press the mixture down gently to pack it in.
- Bake the stuffed mushrooms in the preheated oven for 20-25 minutes or until the mushrooms are tender and the topping is golden and bubbly.
- Remove from the oven and let cool slightly before serving.

- For a vegan version, use dairy-free cheese and cream cheese alternatives.
