These Delicious Vegetarian Stuffed Portobello Mushrooms are a flavorful and satisfying dish, perfect for a meatless meal or as a savory appetizer. Large portobello mushrooms are filled with a delicious mixture of creamy cheese, garlic, spinach, and breadcrumbs, then baked to perfection. Whether you serve them as a main course or a side, these stuffed mushrooms are sure to impress.

  • 4 large portobello mushrooms, stems removed and gills scraped out
  • 1 tbsp olive oil
  • 1/2 cup breadcrumbs (preferably panko)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 2 cups fresh spinach, chopped
  • 1/4 cup cream cheese, softened
  • 1 tbsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Brush the portobello mushrooms with olive oil and place them gill side up on a baking sheet lined with parchment paper.
  3. In a large skillet, sauté the minced garlic over medium heat until fragrant (about 1 minute). Add the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat.
  4. In a bowl, combine the spinach mixture, breadcrumbs, Parmesan, mozzarella, cream cheese, and parsley. Season with salt and pepper.
  5. Spoon the stuffing mixture evenly into the mushroom caps. Press the mixture down gently to pack it in.
  6. Bake the stuffed mushrooms in the preheated oven for 20-25 minutes or until the mushrooms are tender and the topping is golden and bubbly.
  7. Remove from the oven and let cool slightly before serving.

Notes

  • For a vegan version, use dairy-free cheese and cream cheese alternatives.
  • These stuffed mushrooms can be made ahead of time and stored in the fridge for up to 2 days. Just bake before serving.
