  • 1.5 cups mixed vegetables (peas, carrots, bell peppers)
  • 1 large onion, thinly sliced
  • 2 tsp garlic-ginger paste
  • 1 tsp cumin seeds
  • 23 whole cardamom pods
  • 4 whole cloves
  • Fresh cilantro and mint leaves, chopped
  • 2 cups vegetable broth
  • Juice of half a lemon
  • Salt to taste

Instructions

  1. Rinse basmati rice under cold water until it runs clear; set aside.
  2. In a large pot over medium heat, sauté sliced onions in oil until golden brown.
  3. Stir in garlic-ginger paste and cumin seeds; sauté until fragrant.
  4. Add mixed vegetables and salt; cook for about 5 minutes until they soften slightly.
  5. Gently mix in the rinsed rice along with cardamom pods and cloves.
  6. Pour vegetable broth into the pot; bring to a boil, then reduce heat to low and cover tightly. Simmer for 15-20 minutes or until liquid is absorbed.
  7. Remove from heat and let sit covered for 5 minutes. Fluff with a fork and garnish with chopped cilantro, mint leaves, and lemon juice before serving.
