  • 1 teaspoon sugar (optional, to balance acidity)
  • Salt and black pepper, to taste

For the Love-Shaped Croutons:

  • 4 slices of crusty bread (sourdough or French bread works well)
  • 2 tablespoons butter, melted
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried basil

Instructions

  • Prepare the Soup:
    • Heat olive oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
    • Stir in the garlic and cook for 1 minute until fragrant.
    • Add the tomatoes with their juice, breaking them up with a spoon. Stir in the vegetable broth.
    • Bring to a boil, then reduce the heat and simmer for 20 minutes.
    • Blend the soup using an immersion blender or in batches using a blender until smooth.
    • Stir in the heavy cream (if using), fresh basil, sugar (if needed), and season with salt and pepper.
  • Make the Love-Shaped Croutons:
    • Preheat the oven to 375°F (190°C).
    • Use a heart-shaped cookie cutter to cut out shapes from the bread slices.
    • Place the bread hearts on a baking sheet. Brush with melted butter and sprinkle with garlic powder and dried basil.
    • Bake for 10-12 minutes or until golden and crispy.
  • Serve:
    • Ladle the warm soup into bowls. Top with love-shaped croutons and garnish with additional fresh basil.
