Description

Ingredients

  • 1 cup mashed sweet potatoes
  • 1 ½ cups all-purpose flour
  • ¾ cup brown sugar
  • 2 large eggs
  • ½ cup milk (dairy or non-dairy)
  • ⅓ cup melted butter or oil
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Peel and chop sweet potatoes into chunks, boil until tender (about 15 minutes), then mash until smooth.
  3. In a bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
  4. In another bowl, beat eggs, brown sugar, melted butter (or oil), milk, and mashed sweet potatoes until well blended.
  5. Gently fold dry ingredients into wet ingredients until just combined.
  6. Scoop batter into greased muffin tins about ¾ full and bake for 20-25 minutes or until golden brown.
