Instructions
- Preheat the oven to 350°F (175°C).
- Peel and chop sweet potatoes into chunks, boil until tender (about 15 minutes), then mash until smooth.
- In a bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, beat eggs, brown sugar, melted butter (or oil), milk, and mashed sweet potatoes until well blended.
- Gently fold dry ingredients into wet ingredients until just combined.
- Scoop batter into greased muffin tins about ¾ full and bake for 20-25 minutes or until golden brown.
